Ingredients
- 2 slices of arnold 100% Whole Wheat bread
 - 1/2 avocado, mashed
 - 1/2 cup cashews, soaked overnight, drained, and blended into a fine paste
 - 4 thick slices zucchini, grilled
 - 4 thick slices Portobello mushroom cap, grilled
 - 2 slices beefsteak tomato
 - 1 half roasted red pepper
 - 1 small handful spinach
 - salt and pepper to taste
 
Instructions
- Take 2 slices of bread.
 - On one side of one slice, spread your mashed avocado.
 - On one side of second slice, spread your blended cashew paste.
 - Place both slices of bread (topping side up) on a heated grill.
 - On slice with cashew paste, layer grilled mushrooms, zucchini, red pepper, tomatoes, and top with spinach.
 - Place avocado bread on top of sandwich (avocado side facing in).
 - Turn sandwich until fully heated and golden brown on both sides.
