Melon & Avocado Toast

Ingredients (2 Servings)
2 slices Arnold® Country White, toasted
¼ cantaloupe, diced
¼ honeydew, diced
1 avocado
2 tablespoons Feta cheese
5 sprigs of mint
Directions 
  1. Chop cantaloupe and honeydew into small, bite-size pieces. Set aside.
  2. In a small mixing bowl, mash ½ an avocado. Toast 1 slice of bread until golden brown (about 4 minutes). Spread avocado mash on bread slice and top with honeydew and cantaloupe pieces.
  3. Sprinkle Feta cheese crumbles over fruit. Top with chopped mint and serve.
