Using a knife or a mandolin, slice a red onion into ½ inch slices. Consider using a bamboo skewer soaked in water to hold the onion together for easier flipping.
Slice off both ends of a large zucchini. Cut the zucchini so that the pieces are about 4 inches each. Use a knife or a mandolin to make vertical (long) slices of the zucchini.
Using a stove-top grill pan or a bbq, cook the onions and zucchini on both sides until soft.
