Ingredients (2 Servings)
- 2 Arnold 100% Whole Wheat® Rolls
- 5 ounces chicken breast, cooked and shredded
- 2 tablespoons Greek yogurt
- ½ teaspoon Dijon mustard
- ⅛ teaspoon onion powder
- 1 tablespoon walnuts, chopped
- 1½ tablespoons dried cranberries
- ¼ cup diced Granny Smith and Honeycrisp apples, diced
- Salt and pepper, to taste
- ¼ cup baby spinach
- Combine chicken, yogurt, Dijon mustard and onion powder in a medium bowl and mix together thoroughly. Fold in walnuts, cranberries and apples and season with salt and pepper, to taste.
- Layer spinach on the bottom halves of the Sandwich Thins roll. Top each with a scoop of apple chicken salad and a Sandwich Thins roll lid.
