Peach Arugula and Chicken

Ingredients (1 serving)
1 6oz. chicken breast, chopped
1/2 bunch scallions
6 walnuts, crumbled
2 oz. cottage cheese
1 oz. pickled jalapeños, half chopped and half sliced
4 cloves roasted garlic
3 oz. arugula
1 whole local organic ripe peach
salt, to taste
black pepper, to taste
Directions 

Mix together the chopped chicken, scallions, crumbled walnuts (leave half), chopped jalapeños, cottage cheese, roasted garlic and season with salt and pepper. Toast both slices of the roll and spread the chicken salad mixture onto one piece. Slice the peach into small slivers and mix with the arugula, remaining walnuts and sliced jalapeños and place on top of the chicken salad. Lay the other half of roll on top and serve immediately.
