Balsamic Herbed Tofu, Tomato, Pesto and Kale

Ingredients (2 servings)
4 oz. of herbed tofu, sliced and pressed to remove excess water
2 tsp. pesto
2 tsp. balsamic syrup
6-8 slices, roma tomato
2 large kale leaves, stem removed
Directions 

Lay two slices of bread on a cutting board. Spread each slice with 1 teaspoon of pesto. Top with equal amounts of tofu and then drizzle the tofu with equal amounts of balsamic syrup. Top with tomato slices, kale and the additional sliced of bread. Cut in half and serve.

Pesto and tomatoes are a match made in heaven. Pair that with protein-rich, herbed tofu and a slice of sweet tomato and you have yourself a vegetarian feast that any carnivore will also love.
