With May right around the corner and the warmer weather approaching, we may be looking to spend more time outside enjoying the simple things in life.

Simplicity plays a huge role during the summer months as we are more focused on being outside with friends and family rather than being behind a stove and in the kitchen.

Because of that, we are providing you with two super simple recipes that only take you a few minutes to make and will have you outside in no time!

Take advantage of the weather with the Little Bit Zingy Egg Salad Sandwich and the Skinny Chicken Parmesan Sandwich. Although short on time, they still deliver on taste and nutrition.

Choose Arnold Healthfull® bread as your sandwich ends, which provides at least 27g of whole grains in two slices.

Little Bit Zingy Egg Salad
Ingredients
• 6 slices of Arnold Healthfull® Bread Nuts & Seeds variety , toasted or untoasted, depending on your preference.
• 6 hard boiled eggs, chopped.
• Dijon mustard.
• Miracle Whip.
• Low-fat mayonnaise.
• Diced onions and celery.
• Cucumber, skin on and sliced.
• Salt and Pepper.


Directions
Add eggs to bowl. Lightly season with salt and pepper. Add remaining ingredients, except cucumber slices. Mix gently and refrigerate for 4 hours. When ready to serve, you can toast the bread if you like and top one slice bread with egg salad, top with cucumber slices and additional slice of bread.

Recipes Makes Three Sandwiches

Skinny Chicken Parmesan Sandwich
Ingredients
• 6 slices of Arnold Healthfull® Bread Steel Cut Oats & Honey variety.
• 3 Boneless chicken breast cutlets.
• ½ cup Heart Smart Roasted Pepper Sauce.
• 3 slices Low Fat, Low Salt Provolone Cheese.
• Salt and Pepper to taste.
• Lettuce of your choice.

Directions
Place a chicken breast cutlet in a non-stick pan and lightly salt and pepper. Cook until done through. Turn heat to low. Spoon on several tablespoons of sauce, and cover. Allow 2 to 3 minutes to warm. Add provolone cheese on top, then cover till cheese melts. Add to bread(toasted or untoasted), add lettuce on top.
