A Turkey Sandwich You Can’t BEET!

Ingredients:
8 slices of Arnold® Healthfull® Nuts and Seeds bread
1 medium beet
2 medium apples
12 slices of turkey lunch meat
8 slices of fresh jicama

Recipe Makes Four Sandwiches

Directions:

Wash and peel the beet and cut it into ½  inch cubes. Wash and peel the apple and cut into 1 inch cubes. Lightly spray a microwave safe bowl with cooking spray. Put the apple and beet cubes into the bowl and cover with plastic wrap venting one corner. Microwave on high for 7 minutes, test beets and continue to microwave at 2 minutes at a time until beets are tender. Put beets and apples into food processer and puree. Put into a covered bowl and refrigerate until chilled. For each sandwich add 3 slices of turkey, 2 slices of jicama and spread one side of one piece of bread with the beet and apple mixture. Enjoy!
