Many of us have heard the saying “eat your veggies.”

And, if making better eating choices is one of your New Year’s resolutions, salads packed with veggies may have become a staple in your diet the past two weeks.

Although salads packed with veggies are great - we can’t forget about important nutrients such as whole grains!

According to the Dietary Guidelines, it is recommended that adults eat at least 3 to 5 servings of whole grains per day.

To get the whole grains you need, trying tossing a nutritious sandwich into your eating routine like this Grilled Vegetable Sandwich with Black Bean Hummus.

This sandwich uses our Arnold Healthfull® Flax and Sunflower variety, which provides 27g of whole grains in two slices, and is filled with vegetables and a delicious hummus spread.

Grilled Vegetable Sandwich with Black Bean Hummus
Ingredients:
Black Bean Hummus
• 2 cans blacks beans, rinsed well
• Juice from 1 lime
• 2 tbsp. oil
• 2 tsp garlic powder
• 1 tsp cayenne pepper
• 2 tsp cumin
• 1/2 fresh tomato

Sandwich
• 4 slices of Arnold Healthfull® Flax and Sunflower bread
• 1 large red bell pepper, cut into large pieces
• 1/2 onion, sliced
• Olive oil
• Monterrey jack cheese slices
• Pickled jalapenos
• Green olives
• Baby spinach
• Sliced tomatoes

Makes: 2 sandwiches + lots of hummus

Directions:
1. For the black bean hummus, blend all ingredients together well.
2. Drizzle red pepper and onion in a bit of olive oil and grill vegetables.
3. Meanwhile, assemble sandwiches with a heavy spread of hummus, cheese, jalapenos, olives, spinach and tomatoes.
4. Once pepper and onions are cooked, add to the sandwich.
5. Cook sandwich either on a panini grill or on a pan until toasted.
